Life
So I'm really warming up to the idea to major in english/psychology and then get a teaching degree afterwards, just because i could do so much more with the other degrees and then whatever school i teach at knows i have a very good knowledge of english instead of me just being an education major. So we'll see what happens.

Either way would be a good approach toward your goals. Some schools have programs where, if you choose your electives carefully, you can simply "add on" teaching as an extra year at the end. See what's offered.
